It’s not a short story- buckle up! Long long ago in a small town, not so far away, two cookie lovers, Annie + Meghan started Just Baked SLO as a cookie delivery service to Cal Poly students. Everyone started getting married and having kids and Annie bought Meghan out and “expanded” into a tiny little shop in Santa Margarita. Here Libby + Annie would cross paths professionally several times and when Annie had to move unexpectedly for her husband's’ job she twisted Libbys’ arm to purchase the bakery.

Libby started She Makes Cakes in 2010 as a single mom who simply couldn’t afford a birthday cake that her son wanted. A little side hustle turned into a bigger side hustle. When Annie told me to purchase the bakery, I was pretty hesitant as I wasn’t much of a baker just a cake decorator who was self taught, but I learned so much over the years and took a leap of faith. When I purchased Just Baked SLO, I changed many things- I dropped my “She Makes Cakes” and dropped “SLO” and became “Just Baked” I have met the most amazing people over the course of the years and have had the best opportunities. What I haven’t changed is everything being made from scratch with love. Every single item here is truly made from our hearts with you in mind, every time.

From being on Pickler + Ben for the opportunity to make Iron Chef Cat Cora’s wedding cake to filming Chopped:Sweets this adventure has been amazing.

In 2020 we expanded to Paso Robles and in 2023, we built out our dream flagship location downtown on the park. We have expanded to offering a huge breakfast menu as well as coffee and business has blossomed here for us.

We truly look forward to welcoming you here into our shop! If it’s just breakfast + coffee, maybe a birthday- or your wedding— we cannot wait to help you with your treats.
